Tomato Soup with Prawns & Basil

Tomatoes! And they come in red, green, yellow – even black! Wild ones, Brandywines,  Cherry tomatoes, Big Beefs, Better Boys, Green Zebras and others – there’s so many of them!

And they’re aromatic, tempting, inexpensive, and delicious. What a combination!

So, today we’re gonna make a tomato soup. This time – we’ll introduce a bit of variety and add tiger prawns, which I like as much as tomato soup :). Thus, we take what is good and bring it together. As far as logic goes, it cannot not be tasty! 🙂
Tomato Soup with Prawns & Basil

Preparation:

First, flood the cashews with hot water and then set aside for 30 minutes. In a saucepan, stew the onion, garlic, bay leaf, and celery in coconut oil. Next, rinse the cashews and add them to the products in the saucepan for a bit. Keep stewing, adding water when necessary, until all the ingredients are soft (it should take about 10 minutes).

Afterwards, add the tomato concentrate and continue stewing for a moment longer. Then, add the tomato paste, chicken broth, plant milk, and sea salt. Bring it to a boil. Next, take out the bay leaf and mix the whole thing until uniform. Lastly, add the basil.

In the meantime, steam the prawns. When they’re ready, add them to the soup. Season to taste.
