Buckwheat cakes

You are tired of the traditional buckwheat? Use it to create a delicious cakes with fruit topping.

Buckwheat is easily available, and we should use it due to the huge nutrient values. Most of all because of B vitamins, and minerals such as manganese, calcium, phosphorus, magnesium, copper and zinc.

In the stores we can find both roasted buckwheat and not roasted. I recommend option 2, because in the process of roastinge some vitamins fade away.

Additionally: mixed fruits of your choice

Cook the buckwheat, and leave it covered, until it will cool down. Add spices, oil/buter and parsley. Blend everything until it will have a smooth consistency. Then add Lio Shake. Fry on a dry pan, few minutes on one side and few on the other. Blend berries, add a sweetener if you prefer eg. coconut sugar.

Pour fruit mousse on the cakes.
